the acidity is frank. The final exhibits salty notes and is very aromatic.

The crop is hand-harvested in 20kg boxes.
Sol :
Grapes come from blue schist soils from Villé.
Vinification :
Grapes are pressed for a long time(around 8 hours). And then the fermentation is initiated by natural yeasts in big casks.
Elevage :
The wine is aged in big casks for 10 months and the malolactic fermentation is achieved.
