Pale gold hue with greenish tints. Fine, elegant bubbles.
Expressive and complex nose with hints of yellow fleshed fruit and delicate spices. On a second nose the wine
opens with a lightly toasted aroma and touches of praline and lime blossom finely lemon.
Broad on entry to the palate with a lovely creamy mousse. Chiselled and savoury on the mid-palate. Lovely persistence with delicately smoky and spicy notes.
Anne-Sophie’s suggested pairing : Live langoustine from Scotland. Honey sauge and absinthe pepper.
Serving temperature : 7-8°C.
Ageing potential : 5 years.
Gently sloping east-facing hillside where the soil is composed of granitic sands interspersed with loess.
Long (4 hrs) and gentle pressing to extract only the grapes’ purest juices. Cold settling of the must.
Fermentation with indigenous yeasts in demi-muids previously used for 2 to 3 fills.
10 months ageing on the heavy and fine lees with very little stirring (bâtonnage). Bottling, followed by second fermentation in bottle, followed by another 36 months ageing «sur latte» in our cellars. Disgorgement 3 to 6 months before release for sale, without any dosage.
