Oeil :
pale gold with anise tints. Copious fine bubbles.
Nez :
bursting with freshness. Notes of citrus and chilled yellow-fleshed and stone fruit.
Bouche :
Tangy on entry, freshness and good balance on the palate, elegantly coated by the bubbles. Notes of grapefruit peel, bergamot and apricot. Tasty, saline finish.

Vendanges :
Early harvesting by hand to preserve the taste and aromatic freshness of the varietal.
Sol :
Cool valley facing north-east. Areas of leptynites (gneissic metamorphic) granitoids.
Vinification :
Drastic selection of juices at the press exit. Tight settling, start of fermentation in vats at low temperature.
Elevage :
The wine is kept for 12 months on lats in the bottle after it has finished foaming. Disgorged using the "transfert method" (filtration at constant pressure) without the addition of tirage liqueur.
